Pizza Topped Potatoes
5ml extra virgin olive oil (optional)
2 cloves of garlic, diced (or 5g of garlic paste)
1 small red onion, diced
1 cup of mushrooms, chopped (any kind)
100g sundried tomato strips, diced (I use ‘Always Fresh’ from Aldi)
30g Pitted Kalamata Olives, drained and diced (I used ‘Deli Originals’ from Coles)
20g tomato paste (any kind will do)
60g tasty light shredded cheese (I use Aldi brand)
500g raw chicken breast, diced
80g diced bacon (Again, Aldi Real diced bacon pieces/prepackaged)
800g potatoes (I use ‘Spud Lite’, low carb potatoes)
Directions: Boil or steam your potatoes until tender…I air fry or oven bake mine (then smash them with a potato masher before serving).
In a non-stick fry pan, heat the oil and sauté the garlic, onion, mushrooms, sundried tomatoes and olives.
Once tender, add the tomato paste and 4 tbsp of water.
Stir through to coat all the ingredients in the tomato, and then reduce the liquid.
Let’s serve it up: Cut or tear your potatoes in half and spoon the hot pizza mix on top.
Sprinkle with extra cheese or nutritional yeast (you can get this from Coles…It’s like a parmesan cheese vegetarian option), add some rocket and basil.
Season as desired.
