Breakfast Sausage and Spinach Bake 

Ingredients:

500g spicy beef sausage (diced or sliced)

2 cloves garlic (minced)

1 x medium red capsicum (diced)

1 x cup diced onion

250g frozen spinach

1 tbsp chilli flakes (optional)

½ cup/125ml almond milk

 

Directions:

Pre heat oven to 200 degrees/fan forced.

Heat a non-stick pan over medium/high heat.

Add sausage, onion, garlic and spinach. Stir for approx. 5 mins.

Meanwhile, crack 10 eggs into a bowl and add the almond milk. Whisk to combine. Add the chilli flakes if you’re a spice lover.

Transfer sausage mix into a baking tray lined with baking paper.

Pour over egg mixture and give the tray a bash on the bench to eliminate any air bubbles.

Pop in the oven and cook for 20-30 mins, or until golden brown.

Divide into 4 and enjoy a 2-minute re-heat breakfast.

Because ain’t nobody got time for fluff in the am.
