Nutty Chicken Stir Fry

‘Nutty’ Chicken Stir-Fry

Ingredients:
1 x 400g tin of Gado Gado Peanut sauce (Asian isle – Coles)
1 tbsp grated ginger or ginger paste
2 tsp finely chopped garlic or minced garlic
1 tsp extra-virgin olive oil
1 tbsp Sambal Oelek (optional)
800g of pre-packed shredded coleslaw of stir-fry veg
300g chicken breast, diced
1 medium carrot, cut into matchsticks
1 medium red capsicum, cut into matchsticks
1 cup spring onions, sliced
500g Noodles (I use Slendier brand – heath food isle, Coles)

Directions:
Add the oil to a large, nonstick pan over medium/high heat.
Add ginger, garlic and Sambal Oelek and cook for 30 seconds.
Add the chicken and cook until just golden.
Throw in all the veg and cook for 5 mins, or until the veg has softened slightly.
Pour in the Gado Gado sauce and mix well.
Continue to stir-fry for a few minutes, until hot.
Divide the noodles into 4 and pour the stir-fry veg over the top.
Divide into 4 serves for dinner tonight and a quick and grab lunch tomorrow.
Top with peanuts and spring onion for an extra crunch (not in nutritional information).
