Smashed Tomato Caprese Salad
1-2 punnets of rainbow cherry tomatoes
Bocconcini, burrata or buffalo mozzarella
Salt and pepper to taste
Chop and smoosh cherry tomatoes and add to a big bowl
Chop cheese into chunks and add to tomato smoosh
Shred basil and stir in
Add a lug of olive oil
Drizzle balsamic vinegar
Salt and pepper, stir and enjoy!!
Optional extra – garlic croutons
Tear stale sourdough bread into chunks, top with sliced garlic, olive oil and salt and bake at 180 degrees for around 10 minutes.
