    Recipe of the Week – Mexican Stuffed Peppers


    Mexican Stuffed Peppers 



    4 x Capsicums/peppers (any colour – Red is my fav.)

    400g lean beef mince (5 star/5% fat) 

    1 x 400g tin of chopped/diced tomatoes 

    160g basmati rice (use microwave for convenience)

    15g or ½ a packet of Taco seasoning mix 


    Preheat oven to 190 degrees C. 

    Heat a large nonstick pan over medium heat and cook  beef for 5-7 mins until browned. 

    Add rice, taco seasoning and tomatoes. Reduce heat and  simmer for 6-8 mins. 

    Cut off capsicum tops and remove seeds. 

    Place on a baking dish and fill with beef mixture. 

    Cover dish with foil and bake for 35 mins, or until capsicums  are tender.
