    Recipe of the Week – Healthy Snickers Slice

    HEALTHY SNICKERS SLICE

    INGREDIENTS

    2 cups puffed brown rice 

    ½ cup natural peanut butter (just peanuts)

    ¼ cup coconut oil

    ¼ cup sugar free maple syrup

    ¼ cup desiccated coconut

    1 tsp vanilla extract 

    180g dark chocolate 

    Crushed peanuts

     

    METHOD

    Line a small baking tin with baking paper.

    Toast rice puffs on a baking tray at 120° for 10 minutes or until crispy.

    Combine peanut butter, coconut oil, maple syrup, and vanilla in a small saucepan and stir over medium-high heat until melted.

    Use a whisk to combine ingredients until you have a smooth consistency.

    Remove the saucepan from the heat and stir through brown rice puffs and coconut until evenly coated.

    Pour mixture into lined baking tin. 

    Use a spatula to evenly spread the mixture and press down into baking tin. 

    Transfer into freezer and set for one hour.

    Once slice is set, cut into bars.

    Melt dark chocolate in double boiler.

    Remove melted chocolate from heat and cool for 5 minutes.

    Dip bars into melted chocolate and place on a flat tray. 

    Sprinkle bars with crushed peanuts and place tray in fridge until chocolate has set.

    Keep bars refrigerated.
