4-6 x chicken maryland, skin on
1 x 400g tin lentils
1 x punnet of mixed cherry tomatoes
Garlic (2 cloves or so)
Herbs, olive oil, salt and pepper to taste
Baby spinach to serve (you can also add crumbled feta if you like)
Preheat oven to 180 degrees
Pat dry chicken, place in an oven tray, lightly oil and season with salt and pepper (I also used dried thyme and a light dusting of curry powder, but you could use rosemary, basil, parsley etc)
Slice garlic and scatter over chicken (amount of garlic is up to you!)
Bake in oven for around 25-30 mins
While chicken is cooking, drain and rinse lentils, slice cherry tomatoes.
Add to tray with chicken, and bake for a further 15 mins
Serve with baby spinach, (and/or crumbled feta), with a side of quinoa or cous cous.
